Now, these so called "errors" are all merely a game I made up just for you readers called, 'Can you count how tired I am after spending a weekend with five teenaged girls?" Have fun with it.*
Y'all are not disappointing me in the butter/cream cheese department. Let's not "drop the ball" this week in our never-ending quest for the perfect comfort dish with which to morph ourselves and families into human Butterballs before Turkey Day.
You do not have to go with this theme, but today, I am offering Football Finger Foods, in honor of the Indianapolis Colts, 2007 Super Bowl Champs. (This season? 3-3.) So, three cheers and three appetizery foods this week:
1 lb. fried, drained hamburger
1 lb. friend, drained sausage
1 lb. Velveeta, cubed, added to combined meats until melted.
1 t. Worcestershire sauce, added to all of the above
1 loaf "cocktail" bread
Pre-heat 350*. Line cookie sheet with foil. Place approximately 2 T. of mix on bread slices lined up on foil. Bake about 10 mins. or until lightly browned.
Cheesy Buffalo Chicken Dip
1 8 oz. brick of cream cheese
1/2 c. bleu cheese salad dressing
1/2 c. red hot wing sauce
1/2 c. crumbled bleu cheese or mozz.
2 c. cooked shredded chicken
Oven: 350*. Soften cream cheese in pie plate in microwave. Whisk in dressing, sauce, cheese, until smooth. Add chicken and stir well. Bake 20 mins. or until heated through. Stir before serving.
My Favorite Guacamole
4 very ripe avocados, peeled, mashed.
1 t. salt
4 t. lemon juice
1 t. chili powder
3 T. chopped onion
Chopped tomatoes (2 sm. Romas) OR 1/2 can well-drained diced.
Mix all. Cover. Refrigerate at least one hour.
*Tip* You can place one avocado pit in guac to prevent from turning brown. Remove before serving, unless you can make sure that your mortal enemy in the crowd who is rooting for the other team "accidentally" gets the pit.
